Directions:

  • 1.Add all filling ingredients into a pot on medium heat. Stir with a whisk until well boiled and thickened.
  • 2.In a bowl, crumb the biscuits and combine with butter. Mix well.
  • 3.Add crust mixture into your baking dish / pan making sure to flatten.
  • 4.When cooled a bit, pour the filling onto the crust, sprinkle with cinnamon. Refrigerate until cold. Serve and enjoy!

Filling

  • 1L plant milk
  • 90ml Irene's Gourmet Plant-based Butter
  • 1 cup sugar
  • 15ml vanilla extract
  • a dash of ground cinnamon
  • 60ml rice flour
  • pinch salt
  • 120ml corn starch

Crust

  • 1 packet of biscuits (we used the gullon digestives)
  • 3 TBSP Irene's Gourmet plant-based butter
