Sweet potato, Macon and pesto roll-ups

Directions:

  • 1.Lay the sweet potato strips on a flat surface. Layer with strips of Macon on top
  • 2.Smear generously with Basil Pesto
  • 3.Place a +/- 1cm cube of Meltme cheese on one end of the strip and roll it all up. Pin with a toothpick to keep it all together.
  • 4.Stick the roll-ups in the airfryer for 5 min at 180 degrees or the oven for 10 min at 180 degrees until just cooked and until the cheese is soft.
  • 5.Serve right away or can be enjoyed eaten cold.

  • 1/2 a block of Irene's Meltme cheese
  • 1 packet of Herbi Vohr Macon
  • 1 pack of Irene's Basil Pesto
  • 1-2 medium orange sweet potatoes peeled in long thin strips
