Directions:

  • 1.Mix together the yeast, sugar, water, oil, salt with a wooden spoon until creamy. Add flour and mix until ball forms. (this can be done by hand or in a blender with a dough hook). If the dough is sticky, add a little flour. Cover and let rise to double it's volume; knead down. Roll the dough out into a rectangle about 0.5 cm thick.(on the surface sprinkled with flour)
  • 2.Melt some butter (about 3 TBSP), mix with pesto (about half a packet or more to taste) and smear the entire rectangle with the mix
  • 3.Grate the cheese, chop some bacon into bits and sprinkle over
  • 4.Now roll the entire rectangle up tight to make a sausage (like a swiss roll)
  • 5.Cut into 4cm rounds and pack tight into a greased ovenproof dish
  • 6.Let sit for 20mins to rise
  • 7.Bake for approx. 45 mins in a pre-heated oven (180*)
  • 8.Serve hot -YUM!
