Directions:
- 1.Finely chop the rosemary and combine with the lemon zest
- 2.Mix together the lemon juice, wholegrain mustard, olive oil and brine from olives then add in the rosemary mixture
- 3.Cut cubes of the Green Guru tofu, place into a baking tray on baking paper and drizzle with soy sauce
- 4.Cover the tofu with the olive mixture, making sure it spreads over each piece
- 5.Bake in the oven at 180 degrees for 20 minutes, then turn and bake for a further 10 - 20 minutes until browned and slightly crisped around the edges
- 6.Serve with roast veggies and rice. Enjoy!

- 2-3 TBSP Olive oil
- 1/4 cup Juice / brine from olives
- Juice and Zest of 1 lemon
- 2 TBSP Fresh rosemary
- 3-4 TBSP Soya sauce

- 1 TBSP Maple syrup (optional)
