Candice’s potato and kraut salad

A deliciously tangy and crunchy potato salad

Directions:

  • 1.Mix all the dressing ingredients together with a fork
  • 2.Add potatoes and mix
  • 3.Now sprinkle the salad with remaining ½ bottle of kraut and garnish with red pepper and chives
  • 4.Refrigerate for 30 mins.

You'll need:

  • 5 Medium potatoes, boiled, peeled and cubed (luke warm)
  • 1/2 bottle of Sauerkraut / Raw Kimchi / Eastern Delight
  • 1/2 small chopped red pepper for garnish
  • Chives for garnish

For the dressing:

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 water
  • 1/4 cup mayonnaise
  • 1.25 tsp herb salt
  • a pinch black pepper
  • 1 tbsp chopped fresh parsley or coriander
  • 1/2 small chopped red pepper
  • 1/2 bottle Sauerkraut / Raw Kimchi / Eastern Delight
