
Directions:
- 1.In a little oil, fry spring onions and mushrooms lightly
- 2.Mix all the dressing ingredients together
- 3.Put everything into a bowl and mix
- 4.Can be served warm or cold
- 5.Can add some mayonnaise (30ml) to the dressing if you like

Ingredients:
- 1 head of broccoli broken into florets and lightly steamed
- 4 spring onions
- 1 punnet button mushrooms
- 1/2 cup cashew nuts or pistachios, lightly roasted
- 1/2 cup olives de-pipped and chopped (black or green)
- +/- 3 large gherkins
- 1 large avocado
- 1 block of meltme, cubed
Dressing:
- 30ml water
- 60ml balsamic vinegar
- 30ml olive oil
- 30ml avo oil
- 15ml whole grain mustard
- 5ml sugar
- salt to taste
